Pearled Sorghum Grain Pudding

Ingredients

  • 1 cup Ori Sorgho Market’s Pearled Sorghum Grain
    2 cups Water
    4 tbsps Sugar
    ¼ tsp Salt
    1 cup canned Coconut Milk, unsweetened
    1 cup Dairy Free Milk
    1 tbsp Brown Sugar
    2 Egg Yolks
    1 tbsp butter flavored Palm Shortening
    ½ tsp Vanilla
    ¼ tsp Cinnamon

Instructions

  1. In a pressure cooker, combine Ori Sorgho Market’s Pearled Sorghum Grain, water, sugar, and salt. Cook on high pressure for 30 minutes. Once cooked, pour into a medium sauce pan and add coconut milk, dairy free milk, and brown sugar. Cook over medium heat until the mixture starts to thicken, adding in the brown sugar once thick. Place egg yolks in a small bowl. Spoon 3 spoonful’s of the pudding mixture into the small bowl with the egg yolks and mix rapidly. This will temper (warm) the egg yolks and prevent them from scrambling when added to the hot mixture. Once the yolks are warm, add into the pudding mixture, along with the butter flavored palm shortening, vanilla, and cinnamon. Remove from heat. Serve warm or cold.
