Ingredients

  • 1 cup Ori Sorgho Market’s Gluten Free All-Purpose Flour
    1 tsp Sugar
    ⅛ tsp Baking Powder
    1¼ cup Dairy Free Milk Substitute
    2 Eggs
    2 tbsp Olive Oil
    ½ tsp Vanilla
    ½ tsp Salt

Instructions

  1. In a medium size mixing bowl whisk together all dry ingredients. Combine milk, eggs, olive oil, and vanilla in a blender. Add dry ingredient mix to blender. Blend until smooth and well combined. The batter will be a thin consistency. Heat a low sided, 8 inch skillet on medium-high heat. Grease skillet with olive oil. Pour ¼ cup of batter into the heated skillet. Swirl the skillet until the bottom of the pan is covered with batter. Cook for 1 minute. Use a thin spatula to loosen the crepe around the edges. Slowly slide the spatula under the crepe and gently flip. Cook for 1 minute or just until golden brown. Transfer to a plate or cooling rack. Repeat for remaining batter. For added flavor fill with fruit and dust with powdered sugar.
